Recipe: Indian Spiced Roasted Cauliflower
Cauliflower is such a versatile vegetable. Bake it, roast it, steam it, blend it up into rice, turn it into a pizza base. It's a great low-carb way to bulk up your meals. I have been playing around with different recipes and flavours and ended up creating this dish for dinner last week and it was a hit! Super easy to make a big batch and re-heat it for lunches or a quick dinner.



Ingredients:
1/2 head cauliflower
1 lemon, zest and juice
1 tsp coriander seeds
1 tsp turmeric
1 tsp chilli flakes
1 tsp cumin
5 cloves
3 sprigs of mint
1/4 cup Greek or Natural yoghurt
Olive oil
Salt and pepper
1. Chop up the cauliflower into small florets and place in a bowl. Coat with some olive oil, lemon zest and the spices until combined. Roast in a preheated oven at 200 degrees for about 30 minutes.
2. Mix some lemon juice into the yoghurt and set aside.
3. Once the cauliflower is done, assemble with some fresh rocket, and sprinkle with some hemp seeds, sunflower seeds and mint and drizzle over the yoghurt. Don't forget to remove the cloves if you don't want a nasty surprise!
For a quick lunch, I paired some of the cauliflower with a side of haloumi, boiled eggs and half an avocado. Simple and delicious!
